Spinach substitute that really does substitute.

Many ‘sturdy’ garden greens that are allegedly good substitutes for spinach are duds. They’re nice if you like bitter tastes (I do), but they don’t actually replace English spinach as a mild background green in soups or stews.

Tonight I was making a veggie curry, and wanted to mix greens through at the end, so harvested some sweet potato greens from the front garden. Lo and behold, they really did substitute beautifully for spinach. This makes me happy… not just because the greens are tasty, but because it means we have a good use for the vines that escape from the sweet potato patch.
