Saving time and $$ by stocking the freezer

I’m about to start teaching again, which means a late night at work each week. I’m also getting more settled into the longer commute to work, and the added responsibilities of puppy-parenting and serious gardening.

I have less time & energy after work, so am trying to get the freezer stocked for fast dinners. There are a couple of ways to approach this – one is to cook a double dinner in the evening, and freeze half for later. I’ve used this technique to freeze some veg curry & dal, and a batch of lentil burgers in the past couple of weeks.

The other approach is to cook extra meals on the weekend, specifically destined for the freezer. I’ve used this method too, and currently have a big batch of veggie/lentil soup, a veggie pasta bake and a Mexican bean/ pumpkin/ tortilla bake good to go.

I also have some key ingredients frozen in dinner-sized portions – homemade seitan, cooked chickpeas, cooked aduki beans, Lam Yong ‘soy nuggets’ (aka Buddhist faux meat), spicy black beans, home made pasta sauce and home made salsa. Having these on hand means we save time on weeknights, without spending money on takeaways. We can use pantry ingredients ( pasta, noodles, rice etc) and whatever veggies we have in the garden or fridge to throw together a fast meal.
