Raw vegan ‘truffles’

I adapted these from a recipe posted by Shazzi on Simple Savings (URL in blogroll). They’re really fudgey, and great with a cup of tea or coffee.

RAW VEGAN TRUFFLES

INGREDIENTS:
½ cup almonds
½ cup cashews
½ cup sunflower seeds
1 cup dates
¼ cup sultanas
1-2 tsp vanilla essence
2-3 dessert spoons cocoa powder (Plus extra spoonfull for dusting)

METHOD
Process nuts, seeds, dates, sultanas, vanilla essence and cocoa in a food processor until smooth. (This takes a while. You may need to add a tablespoon of water if dates are really dry).

Roll into walnut-sized balls, then dust with additional cocoa (this is easiest if you put it on a small plate, & lightly roll the truffles in it).

I flash-froze mine on a tray, then bagged them for longer term storage in the freezer.

Makes about 30
