Vegan Breakfast Bars

I haven’t posted a recipe for a while, but thought I’d share this veganised version of a breakfast/energy bar I adapted from Ellen’s Kitchen. I liked the look of it, because in addition to being quite high in protein, it includes good plant-based sources of iron & calcium. The original recipe is on her blog, credited to Eric Conrad. I have tweaked the ingredients, and some of the directions, and added my notes along the way. It makes a slightly dry, but quite tasty bar, good for a speedy breakfast. I will probably add a grated apple next time, rather than extra liquid, as I think the grated fruit will make it a little moister and tastier. 

Vegan Bars of Iron

1 cup raisins

1/2 cup figs, chopped

1/3 cup macadamia oil (or any bland vegetable oil)

1/2 teaspoon of stevia powder

1 tablespoon of soy flour + 1 tablespoon water (this replaces an egg, so use any egg replacer of your choice)

1 1/2 cups wholemeal spelt flour

1/2 cup blackstrap molasses

1 cup non-dairy milk powder (I used almond milk powder, which adds sweetness & calcium as well as protein)

1 cup almonds; sliced

1 cup quick cooking oats

1 tablespoon ground flax or hemp seed (optional)

1/2 cup non-dairy milk (I had to add about 3/4 cup to get enough moisture – it may be unnecessary if you add fresh fruit, so play it by ear)

1 teaspoon ground cinnamon/ginger/chai spice (your choice)

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder (Next time I make these I will add a tablespoon of cider vinegar or lemon juice to get more ‘lift’)

Pre-heat oven at 350 degrees (or about 190 Celcius). Grease or line a 9 inch by 13 inch pan.

Chop raisins & figs (using a food processor if possible).

Combine oil, molasses, non-dairy milk & egg replacer. Add vinegar/grated apple (if using)

Combine flour, dry non-dairy milk, ground seeds, baking powder, baking soda, salt and spice.

Add wet mix to dry mix.

Stir in oats, raisins, and almonds.

Pour into greased pan and spread evenly.

Bake 25-30 mins

Cool in pan and cut into bars.
