Soy-free, grain-free, sugar-free vegan chia-chocolate pudding

I’m continuing to experiment with chia, and last night’s dessert-laden episode of Masterchef prompted me to do a bit of online research, in an attempt to find an easy recipe for a vegan chocolate pudding. After reading many options, I concocted my own recipe, using ingredients I had on hand. Feel free to adapt as you see fit!

My final recipe serves one, but can be doubled or quadrupled, and tweaked as desired to make it a raw pudding:

Soy-free, grain-free, sugar-free vegan chia-chocolate pudding

2 small ripe bananas (or one large)

1 tablespoon of almond butter (or an equivalent amount of soaked raw almonds)

1 tablespoon of chia seed

2-3 tablespoons of water

2-3 tablespoons of cocoa powder (or raw cacao if you prefer)

Scant 1/4 teaspoon stevia (or any other sweetener to your taste)

1 teaspoon vanilla essence

A good shake of cinnamon (to taste)

Place all ingredients in a deep bowl or container, blend with a stick blender (or you could use a blender or food processor for large amounts). Spoon into a cup,  & allow to stand anywhere from half an hour to overnight (til it reaches your preferred thickness). Makes about 1/2 cup, or more if extra liquid is added. Top with berries if preferred. For nut-free pudding, replace almonds/almond butter with coconut cream. For Mocha Pudding, replace the water with cold espresso.
