Farmer direct veggie experiment: Week One

Hello to visitors from Sydney Food Connect!

There were are few changes to the box, and we wound up with: oranges, bananas, limes & kiwis, plus a bunch of gai lan, a small cos lettuce, some potatoes, a small butternut pumpkin, 2 ears of corn, half a swede (!), a medium sized beetroot with greens, 2 zucchini & 2 cucumbers.

I was *very* happy to see the pumpkin was whole – it can wait on the shelf for a while!

Anyway, to the cooking & eating part – last night we had stirfried tofu, gai lan, zucchini, mushrooms & hokkien noodles in veggie ‘oyster’ sauce – delish.

Today’s lunch was going to be roast veg & tofu (leftover from Sunday) plus grains, but I have switched it to a roast veggie salad to make use of the cos.

Planned dinner menus for the next couple of days:

Wednesday: Corn fritters (fresh corn mixed in a chickpea flour batter & pan-fried) with salad (ie avocado, cos & cucumber), blackbeans, & salsa.

Thursday: Chickpea cutlets, mixed roast root veg (cubed beetroot, swede, sweet potato, pumpkin, potato) & salad.

We’ll be away on the weekend, so Friday’s dinner will be ‘whatever needs to be cooked up’. I want to make sure all the perishable stuff gets eaten first. I’ll make a slow-cooker soup to use the beetroot greens & other bits & pieces, and portion it up for the freezer.

I’d love to see a photo or two. You get such interesting stuff in your box compared to mine here in the desert. gai lan? swede? Your dinners look great.

Thanks Tammy, will try & remember to take a picture next week. It did cross my mind when we were unpacking, but it had been a long day…
