Millet breakfast cake

I had a litre of apple/pear juice about to hit its use-by date, so decided to make this ‘cake’ for breakfast. It’s a make ahead dish; so yesterday I cooked millet in plenty of juice, with sultanas, cinnamon & lime zest added. Once the millet was done, I pressed it into a small baking dish, and put it in the fridge overnight. This morning I was able to cut a slice out of the firmed up millet cake, which I served with chopped almonds.

It’s a delicious, gluten free, dairy free breakfast, and a nice way to eat whole grains. It also makes good use of the glugginess of leftover millet (which I find quite off-putting in other contexts!)
