Gnocchi – egg, wheat & dairy free

I just made gnocchi for the first time. It was super easy, cheap & delicious. I thought the recipe might be handy for people on special diets. Recipe serves 2 (with leftovers)

500 gm potatoes (3 very large would be about right)
1 1/4 cup light spelt flour
1 tablespoon olive oil
1 teaspoon salt

First: put a large pot of salted water on to boil.


Peel potatoes, chop & boil til very soft.
Drain, mash, and cool til you can handle the potato.
Knead flour, salt, oil into the mash, til you get a soft dough.
Divide into 3 balls, roll each ball into a long 2 cm sausage.
Cut the sausage into 2 cm ‘pillows’.
Boil in small batches in salted water for about 2 mins (they’re done when they float to the top).
Remove with slotted spoon, serve with your fave sauce.

Notes: I did one as a test before I rolled all the dough out – just to make sure it would hang together. It worked fine with spelt, not sure how other non-wheat flours would go though – feel free to experiment!
