Dinner plans

I took a look in the fridge to think about dinner for tonight.

We have a container of home-cooked chickpeas I thawed yesterday, a lot of mushrooms that are starting to look tired, plus some odds & ends.

My plan, therefore, is to make a batch of mushroom-miso gravy to pour over the renowned Veganomicon Chickpea Cutlets.

I’ve never made either of these dishes but the recipes for both look so straightforward, I’m not worried.

And the results?

It was a lovely meal. I used the Veganomicon’s mushroom gravy recipe, & added a little miso at the end. I used the oven bake method, and made a pan of cubed pumpkin, chopped zucchini and about a 3rd of a capsicum (leftover from another dish). I threw in 4 spears of asparagus (also leftover from earlier in the week) for the last ten minutes – they roasted perfectly. I’m thinking of making up a double batch of the cutlets to keep in the freezer for quick meals, as I think they’ll reheat well.
