Faux tapenade scrolls & nut cheese

I’m taking snacks to an afternoon barbeque at a friend’s house tomorrow, and thought I’d make some tapenade with some of the (very good) olives I bought in bulk at a middle-eastern grocery. I plan to blend the olives with garlic, parsley, chilli flakes, nutritional yeast, lemon juice and some nuts to make a creamy spread. I generally make vegan nibbles for omnivorous gatherings, and they are always eaten & enjoyed. Aldi’s frozen puff pastry is vegan, & very handy for quick ‘fancy’ snacks. I thaw it, smear it with tapenade or home-made pesto, then roll it up, slice into mini scrolls & bake. Not much more work than hummus & veg slices, but more indulgent, & good with a beer.

We have a big bag of macadamias in the fridge, so I’ll soak a cup or so overnight & use those in the tapenade. I’m also curious to try this nut cheese from the kuntrageous vegan:

Ingredients: 1 cup raw soaked cashews 2 large or 3 small garlic cloves; smashed 2 T cold pressed olive oil 1 T miso (i like white) 2 T cashew water juice of a half lemon food process garlic, lemon, olive oil, cashew water and miso until smooth. Add cashews and food process until smooth. Store in the fridge in an air tight container; this is good for 5 days.
