Bulk Vegan Pancake Mix

Adapted (loosely) from Leanne Ely, the Dinner Diva
5 cups flour – any kind
2 cups rolled oats
1 cup non-dairy milk powder  (I use ‘almond drinking powder’ from the asian grocery)
3 tablespoons baking powder
1 tablespoons baking soda
7 tablespoons soy flour (or egg replacer – omit if using eggs)
1 tablespoon salt
1/2 cup raw sugar (optional – I don’t use it)

Mix all together in a very large bowl and store an airtight container in your pantry or freezer.

To make pancakes use:
1 cup pancake mix
1/2 to 2/3 cup water (start with the lesser amount first and add if you need to)
2 tablespoons vegetable oil
I egg or equivalent  (if not using soyflour or other egg replacer)
